Guisados Burbank opened Monday, October 3, bringing their trademark tacos filled with simmered meats and sauteed vegetables to Downtown. Guisados Burbank is the fifth Los Angeles location for the authentic Mexican taco shop, which was started in Boyle Heights in 2010.
Does the food live up to the hype? Absolutely.
With a creative menu focusing on steak, chicken and pork simmered in a variety of sauces, the nod to homestyle cooking is obvious. Plentiful vegetarian options populate the menu along with two nice shrimp and fish offerings.
Be prepared with plenty of napkins for a juicy experience. The moist meat and vegetable fillings combine with the dry handmade corn tortillas for a delicious, but slightly messy, bite.
For those who don’t know where to start, the Guisados original sampler plate of 6 mini tacos includes one each of the two steak and two chicken options, along with two pork – the chicharron and the cochinita pibil. Or, make your own sampler plate of any six fillings.
Our favorites so far: the camarones (shrimp), the hongos (mushroom), tinga de pollo (chicken in red sauce), the steak picado and the calabacitas (squash.)
The cochinita pibil is admittedly spicy, but a great combination of flavors and tender meat. I’m not personally a fan of mole in general, but did enjoy the nutty, chocolatey flavor of the chicken mole poblano, although the chicken was a bit chewy.
We also really enjoyed the chuleta con chile verde, with its mild pork imbued with an excellent green salsa.

Guisados’ sweetened agua frescas are delicious. They offer melon, jamaica (hibiscus) and limon along with horchata. Add some coldbrew Stumptown coffee to your horchata for a little kick. We found the jamaica perfectly sweetened, but the horchata a bit too sweet.
The tamale masa is airy and light. Our pollo tamale was filled with the perfect ratio of chicken and salsa verde. It’s now one of my favorite tamales ever.
Breakfast tacos are served from 9 a.m. to 11 a.m. and tamales are available daily in limited quantities.
For those not accustomed to spicy flavors, order your tacos without the chile for a milder bite.
Long, but quick-moving lines, are typical around lunch and dinner times. Food is usually ready within ten minutes after ordering. Free parking is available in the many Downtown Burbank lots nearby.
Our new favorite stop for a flavorful twist on tacos, Guisados Burbank receives a Tops In Town. Let’s hope they’ll offer a papas (potato) taco soon for a special!
